Black Bean Dip

This recipe can be served with tortilla chips or on pita bread. Feel free to experiment with this delicious appetizer. Happy cooking and Bon appetit!

Ingredients:

• 3/4 cup of black beans (or any other dried beans of choice)

• 2 cups of frozen corn

• 1 medium apple – cored and finely chopped

• 3 green onions – finely chopped

• 2 cups of finely chopped red kale (you can use any type of kale)

• Squeeze of lemon juice from 1/2 of a lemon

Directions:

1. Ccook the beans , but do not overcook or the recipe will be mushy.

2. Dry roast the corn in an iron skillet on medium high heat until it begins to brown. Remove from heat and let cool.

3. In a large bowl mix the beans, corn, apple, green onions, kale, and lime juice. Mix well.

4. Enjoy!
