Strawberry Infused Quinoa

Ingredients:

• 3/4 cup water

• 1/4 cup cashews

• 1 cup frozen strawberries

• Add sugar (optional)

• 1 cup cooked quinoa (any variety)

• Toppings: blueberries, cran berries & almonds

Toppings:

• Toasted sliced almonds

• Toasted coconut flakes

• Peaches

• Raspberries

• Maple syrup, optional

• Extra splashes of almond milk, optional

• More spices to taste are optional (cinnamon, nutmeg, etc.)

Directions:

1. Add top 4 ingredients into a high-powered blender. Blend on high until smooth and creamy (will be the consistency of milk). Set aside.

2. Place quinoa in a bowl, pour milk over and sprinkle on toppings.

3. Enjoy!
