Minted Watermelon

Ingredients:

• 5 cups of cubed watermelon (you can vary this to suit you. A little more or less won't hurt)

• 1 cucumber , chopped into chunks

• 1 large handful fresh mint , chopped finely

• 2 tablespoons olive oil

• Juice of 1 lemon

• 1 tablespoon maple syrup

Instructions:

1. Add your chopped watermelon and cucumber to a large salad bowl.

2. Mix your olive oil, lemon juice and maple syrup up in a small cup or bowl to make a dressing.

3. Season the dressing.

4. Pour the dressing over the melon and cucumber in the bowl and stir so everything is coated.

5. Sprinkle over the fresh mint and stir gently again.

6. Cover bowl and place in the fridge for 20 - 30 minutes to let the flavors infuse.

7. Enjoy!
